Hundred Dollar Bacon
Ingredients:
1lb bacon
¾ cup light brown sugar
2 tsp cracked black pepper
2 tsp red pepper flakes
½ tsp smoked paprika
Sriracha Sauce
Cooking Instructions:
Do not preheat oven. The bacon fat will rend better if cooked while the oven preheats. Place oven rack just above the middle of the oven. Line a baking sheet with parchment paper and place a wire rack over the parchment paper.
Step 1:
In a small bowl combine the brown sugar, cracked black pepper, red pepper flakes, and smoked paprika.
Step 2:
Lightly pat the bacon dry. Lay bacon slices on the wire rack. Gently spread the sugar mixture over the bacon. Add sriracha sauce to taste. We tend to put 6 or 7 drops along the length of the bacon.
Step 3:
Preheat oven to 400°F and place baking sheet with bacon in cold oven. Bake for 20 minutes, rotating baking sheet about halfway through. After 20 minutes check bacon. The thickness of the bacon will effect baking time. Bacon is done when crispy and starting to turn dark brown. If bacon is not done, bake for an additional 1 minute at a time. Because we are using brown sugar, bacon will go from properly cooked to burned quite rapidly.
Once bacon is crispy and dark brown, remove from oven and let stand for 10 minutes. Bacon will continue to crisp once removed from the oven.
