Sushi Rice

 

Ingredients:

            2 cups short grain rice

            2 tbsp clarified rice vinegar

            2 tbsp sugar

            1 tsp cracked sea salt

 

Instructions:

Step 1:

Rinse rice thoroughly.  This can be done using a fine mesh strainer or a bowl.  If using a strainer, rinse rice until water comes out clear.  If using a bowl, put rice in bowl and fill with water.  Swirl water and rice, drain.  Repeat until water runs clear.

Step 2:

Place the rinsed rice in a medium saucepan.  Cover with 2 cups of water.  With the saucepan uncovered, bring to a boil.  Once boiling, reduce heat to low and cover the saucepan.  Cook for 15 minutes.  Remove from heat and let stand, covered, for an additional 15 minutes.

Step 3:

In a small, microwave safe bowl, combine vinegar, sugar, and salt.  Microwave for about 30 seconds. 

Carefully remove bowl from microwave and stir mixture until salt and sugar completely dissolve.

Finishing:

Put rice in a large mixing bowl.  Pour vinegar mixture over rice.  Using a wooden spoon, fold rice and vinegar until completely mixed and rice is coated in the vinegar mixture.
